Tres Leches Cake

Popular in Latin America, this cake is traditionally made with three milks (tres leches): evaporated, sweetened condensed, and whole. Here we substitute yoghurt for the whole milk, with a delicious result.

Ingredient List

  • 1 package (15.25 oz) yellow cake mix with pudding
  • Water, oil and egg whites called for on cake mix box
  • 1 1/2 cups Mountain High® original or lowfat plain yoghurt
  • 1 can (5 oz) evaporated milk
  • 1 can (14 oz ) sweetened condensed milk
  • 1 cup frozen whipped topping, thawed
  • 1/4 cup shredded coconut, toasted

Preparation

  1. Make, bake and cool cake mix as directed on package for a 13x9-inch cake. Cool 5 mintues. Poke top of hot cake every 1/2 inch with long-tined fork, wiping fork occasionally to reduce sticking.
  2. In medium bowl, gently whisk together yoghurt, evaporated milk, and condensed milk. Pour evenly over cake. Cover and chill for 2 to 3 hours or until well chilled.
  3. Top with whipped topping and shredded coconut. Store in refrigerator.
