This Tiramisu uses yoghurt instead of costly mascarpone. You can also use 1 cup of yoghurt cheese in place of the cream cheese.

Ingredient List

  • 1 cup Mountain High® Yoghurt Cheese* or 1 package (8 oz) cream cheese, softened
  • 2/3 cup powdered sugar
  • 1 cup Mountain High® original or lowfat vanilla or plain yoghurt
  • 2 cups frozen whipped topping, thawed or sweetened whipped cream
  • 1 tablespoon instant coffee crystals
  • 2 tablespoons sugar
  • 1/2 cup hot water
  • 18 ladyfingers (from two 3-oz packages)
  • Unsweetened baking cocoa, if desired

Preparation

  1. Prepare Mountain High® Yoghurt Cheese.
  2. In a large bowl, blend 1 cup Mountain High® Yoghurt Cheese or cream cheese and powdered sugar with an electric mixer on low speed. Fold in yoghurt and 1 1/2 cups of the whipped topping with a spatula until smooth.
  3. In a small bowl, dissolve coffee crystals and sugar in the hot water. Split ladyfingers in half and line the bottom of an 8x8-inch baking dish with the bottom halves. Drizzle or brush with half of the coffee mixture, then spread half of yoghurt mixture over top.
  4. Repeat with remaining ladyfinger halves, coffee mixture, and yoghurt mixture. Spread remaining 1/2 cup whipped topping over yoghurt mixture and sprinkle with cocoa. Cover and chill for 4 to 6 hours before serving. Store in refrigerator.
