Split Pea and Ham Soup

A hearty soup for a big appetite. Add a crusty loaf of bread and a salad and you've got dinner. You can find dried split peas near the dried beans in most grocery stores.

Ingredient List

  • 2 slices hickory-smoked bacon
  • 1/3 cup chopped onion
  • 1/3 cup chopped celery
  • 1 bag (16 oz) dried green split peas, sorted, rinsed
  • 6 cups water
  • 1 teaspoon kosher (coarse) salt
  • 1/4 teaspoon ground thyme leaves
  • 1 cup diced cooked ham
  • 2 cups Mountain High® original or lowfat plain yoghurt
  • 1/4 cup cream sherry
  • Additional Mountain High® original or lowfat plain yoghurt, if desired

Preparation

  1. In a large Dutch oven over medium heat, cook bacon until crisp. Transfer to paper towels to cool, leaving bacon fat in pan. Crumble cool bacon and set aside.
  2. Add onion and celery to bacon fat. Cook and stir over medium heat about 5 minutes or until onion is translucent. Add peas, water, salt, thyme, ham, and the bacon. Heat to boiling; reduce heat. Cover and simmer until peas are tender, 1 hour to 1 hour 30 minutes. Remove from heat; stir in yoghurt and sherry. Serve warm with a dollop of yoghurt.
