Ingredient List

  • 1 cup uncooked brown rice
  • 2 tablespoons milk
  • 1 tablespoon crushed saffron threads
  • 1 teaspoon ground turmeric
  • 2 to 3 cups Mountain High® original plain yoghurt
  • 2 tablespoons olive oil
  • 6 whole cloves
  • 2 cinnamon sticks
  • 2 cardamom pods
  • 2 large red onions, sliced
  • 1/2 teaspoon freshly ground black pepper
  • 2 cloves garlic, finely chopped
  • 1 teaspoon grated gingerroot
  • 4 bone-in chicken breasts
  • 1 pound tomatoes, seeded and chopped
  • 1 tablespoon sliced almonds

Preparation

  1. Cook rice according to package directions. Keep warm.
  2. Meanwhile, heat milk in medium microwavable bowl, uncovered on High 30 seconds or until boiling. Stir in saffron. Let cool to room temperature; stir in turmeric. Mix in yoghurt until smooth; set aside.
  3. Heat olive oil in a 12-inch skillet over medium heat and add cloves, cinnamon sticks, and cardamom pods. Cook until they release their fragrance, about 2 to 3 minutes. Add onions and cook until transparent, about 10 minutes. Stir in pepper, garlic, ginger. Add chicken to skillet; increase heat to medium-high and brown chicken on both sides, stirring onion mixture occasionally. Stir in tomatoes.
  4. Add yoghurt mixture to skillet, reduce heat to low, and cook for about 20 minutes, or until juice of chicken is clear when thickest part is cut to bone (at least 165°F). To serve, spoon rice into a large, deep serving plate. Top with chicken; pour sauce on top (discarding cloves, cardamom pods, and cinnamon sticks). Garnish with almonds.
