Ingredient List

Crusts:

  • 1/2 cup butter, softened
  • 1 package (3 oz) cream cheese, softened
  • 1 cup all-purpose flour
  • 1/4 cup shredded sharp Cheddar cheese (1 oz)

Filling:

  • 3 eggs, beaten
  • 1/2 cup Mountain High® original or lowfat plain yoghurt
  • 1/4 teaspoon kosher (coarse) salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1 can (4 oz) chopped green chiles, drained
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups shredded Monterey Jack cheese (6 oz)

Preparation

  1. In a medium bowl, mix butter and cream cheese until smooth. Cut in the 1 cup flour with a fork to create pea-size crumbles. Add the Cheddar cheese, mixing well. Form mixture into a large dough ball. Cover and chill for 1 to 2 hours.
  2. Divide dough into 24 equal-size pieces. Press each ball down flat across the bottom of each of 24 non-stick mini-muffin cups.
  3. Combine eggs, yoghurt, salt, pepper, and chiles. Mix well. Toss 1 cup of the Monterey Jack cheese in the 1 tablespoon of flour. Fold cheese into egg mixture. Divide egg mixture evenly over dough in muffin cups. Sprinkle with remaining cheese.
  4. Bake at 350°F for 20 to 25 minutes until quiches are golden brown on top and set in the middle.
