Chicken Skewers

  • About 8 bamboo skewers (6 inch)
  • 1 package (14 oz) chicken tenders (not breaded)
  • 1 1/2 cups Mountain High® original, lowfat or fat free plain yoghurt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely chopped garlic
  • 2 tablespoons ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Tzaziki sauce

  • 1 cup Mountain High® original, lowfat or fat free plain yoghurt
  • 1/2 English cucumber, peeled, seeded and finely chopped
  • 2 tablespoons chopped fresh mint leaves
  • 1 garlic clove, finely chopped
  • 1/4 teaspoon Kosher (coarse) salt
  • 1/8 teaspoon freshly ground pepper

Preparation

  1. Soak skewers in water at least 30 minutes to prevent burning. Push a skewer lengthwise through each chicken tender. Place chicken in an oiled glass or ceramic baking dish. Set aside.
  2. In a medium bowl, gently stir together remaining Chicken Skewer ingredients. Pour over chicken, then turn each skewer to coat each chicken piece thoroughly. Cover and chill for one hour.
  3. Meanwhile, make the Tzaziki: In a small bowl, mix the yoghurt, cucumber, mint, and garlic. Season with salt and pepper and stir again. Set aside at room temperature.
  4. Before cooking chicken, shake off excess marinade and, using direct medium heat, grill or broil chicken 6 to 8 minutes until cooked through and no longer pink inside, turning once halfway through cooking time to prevent charring. Discard marinade.
