Mediterranean Chicken Skewers

Chicken Skewers
- About 8 bamboo skewers (6 inch)
- 1 package (14 oz) chicken tenders (not breaded)
- 1 1/2 cups Mountain High® original, lowfat or fat free plain yoghurt
- 2 tablespoons fresh lemon juice
- 1 tablespoon finely chopped garlic
- 2 tablespoons ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Tzaziki sauce
- 1 cup Mountain High® original, lowfat or fat free plain yoghurt
- 1/2 English cucumber, peeled, seeded and finely chopped
- 2 tablespoons chopped fresh mint leaves
- 1 garlic clove, finely chopped
- 1/4 teaspoon Kosher (coarse) salt
- 1/8 teaspoon freshly ground pepper
Preparation
- Soak skewers in water at least 30 minutes to prevent burning. Push a skewer lengthwise through each chicken tender. Place chicken in an oiled glass or ceramic baking dish. Set aside.
- In a medium bowl, gently stir together remaining Chicken Skewer ingredients. Pour over chicken, then turn each skewer to coat each chicken piece thoroughly. Cover and chill for one hour.
- Meanwhile, make the Tzaziki: In a small bowl, mix the yoghurt, cucumber, mint, and garlic. Season with salt and pepper and stir again. Set aside at room temperature.
- Before cooking chicken, shake off excess marinade and, using direct medium heat, grill or broil chicken 6 to 8 minutes until cooked through and no longer pink inside, turning once halfway through cooking time to prevent charring. Discard marinade.
