German Apple Pancake

Great for breakfast or a late night snack, this special dish is a delight.

Ingredient List

  • 3 eggs
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 4 tablespoons sugar
  • 1/2 cup Mountain High® plain yoghurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 3 tablespoons butter
  • 1 Granny Smith apple, peeled and sliced
  • Powdered sugar, if desired

Preparation

  1. In a large bowl, whisk together eggs, flour, baking powder, 2 tablespoons of the sugar, yoghurt, and vanilla extract until well mixed. Allow batter to rest at room temperature for 30 minutes to an hour.
  2. In a small bowl, combine the remaining 2 tablespoons of sugar and the cinnamon.
  3. Heat butter in 10-inch cast iron or ovenproof nonstick skillet in 425°F oven, 2-3 minutes or until melted. Swirl butter around side of pan. Sprinkle 1/2 of the cinnamon-sugar mixture into the pan. Layer the sliced apples in the skillet. Sprinkle remaining cinnamon sugar mixture evenly on top of the apple slices.
  4. Bake at 425°F for 5 minutes until sugar is bubbly. Remove hot skillet from oven and pour batter over apples. Return skillet back to oven and bake for about 15 minutes, until pancake is golden and apples are fork tender. Remove skillet from oven. Loosen side of pancake from pan. Turn pan upside down onto a serving plate to release the pancake. Sprinkle with powdered sugar; serve warm.
