Garlic Chicken Dijon

Sure to become a weeknight favorite for busy cooks. Serve with scalloped potatoes or rice and steamed vegetables.

Ingredient List

  • 2 pounds boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup Mountain High® original plain yoghurt
  • 2 tablespoons all-purpose flour
  • 3 to 4 cloves garlic, finely chopped
  • 1 tablespoon Dijon mustard

Preparation

  1. Sprinkle chicken with 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper. Place in 13x9 glass dish sprayed with cooking spray.
  2. In a small bowl, mix yoghurt and flour. Stir in garlic, mustard and remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Spoon mixture over chicken. Cover with foil; bake at 325°F for 35 to 45 minutes (turn chicken half way though bake time) or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Remove chicken from sauce; slice. Serve with sauce.
