Ingredient List

Vanilla Lime Sauce:

  • 1/2 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1/2 cup from tub Mountain High™ Original Vanilla Whole Milk Yoghurt
  • 1 teaspoon grated gingerroot

Pancakes:

  • 2 eggs, beaten
  • 1 tablespoon vegetable oil
  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1/4 cup water
  • 3 green onions, finely chopped
  • 1 tablespoon finely chopped fresh parsley
  • 1 cup all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons curry powder

Preparation

  1. To make the sauce: In a small bowl, combine all sauce ingredients. Cover and refrigerate 1 to 2 hours to blend flavors.
  2. In a small bowl, combine eggs, oil, yoghurt, water, green onions, and parsley. Mix well. In a medium bowl, mix together flour, baking powder, baking soda, salt, and curry powder. Whisk flour mixture into egg mixture.
  3. Brush griddle or skillet with vegetable oil if necessary (or spray with cooking spray.) Heat griddle or skillet over medium-low heat (325°F). (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.)
  4. For each pancake, pour about 3 tablespoons batter onto griddle. Cook 4 to 5 minutes or until bubbles break on surface and bottom is golden brown. Turn; cook other side until golden brown. Serve warm with Vanilla Lime Sauce.
