Hold the blender! This gazpacho is whipped up nice and easy with a whisk. Serve chilled, on a lazy summer afternoon under blue, blue skies.

Ingredient List

  • 1 cup 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 2 bottles (12-oz each) spicy vegetable juice
  • 1/2 cup seeded, chopped tomato
  • 1/2 cup seeded, chopped cucumber
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped celery
  • 2 green onions, finely chopped
  • 2 tablespoons grated lemon peel
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Additional Mountain High™ Original Plain Whole Milk Yoghurt, if desired
  • Chopped parsley, if desired
  • Chopped tomato, if desired

Preparation

  1. In a large bowl, whisk together yoghurt and tomato juice until smooth. Stir in vegetables and lemon peel, salt and pepper. Cover and chill for one hour to blend flavors. Ladle into bowls and garnish with a dollop of yoghurt, chopped parsley and tomato.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
