Cream of Vegetable Soup

A great way to get your veggie servings in! To serve in a bread bowls, cut off tops from large (about 3 1/2 inches in diameter). Remove bread from inside of each roll, leaving 1/2-inch shell on side and bottom.

Ingredient List

  • 1 tablespoon olive oil
  • 2 medium onions, chopped
  • 2 celery stalks, chopped
  • 2 medium carrots, chopped
  • 1 pound sliced fresh mushrooms
  • 2 teaspoons honey
  • 1 cans (14.5 oz each) chicken broth
  • 4 cloves garlic, finely chopped
  • 1/2 teaspoon kosher (coarse) salt
  • 1/4 teaspoon black pepper
  • 6 tablespoons heavy whipping cream
  • 2 tablespoons chopped fresh parsley
  • 2 cups from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt

Preparation

  1. Heat olive oil in a 12-inch skillet over medium heat. Cook onions, celery, carrots, and mushrooms 5 minutes, or until softened, stirring occasionally. Stir in honey, broth, garlic, salt, and pepper. Heat to boiling; reduce heat. Simmer uncovered 15 minutes.
  2. In 1 quart saucepan, cook cream over medium heat 2 minutes, whisking until thickened. Whisk in parsley and yoghurt; just until heated. Pour cream sauce over vegetable mixture; stir in.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
