Crab-Stuffed Tomatoes

Ingredient List

  • 4 large tomatoes
  • 1 teaspoon butter
  • 1 refrigerated container (8 oz) pasteurized lump crabmeat, well drained, cartilage removed
  • 1/4 cup unseasoned dry bread crumbs
  • 1/4 cup mayonnaise
  • 1/2 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt

Preparation

  1. Slice tops off each tomato (about 1/2” from top) and remove and discard seeds. Scoop out and dice centers. Set aside.
  2. Cut a thin slice from bottom of each tomato to help it stand upright. Place hollowed tomatoes upside down on a cooling rack to drain.
  3. Meanwhile, heat butter in a 10-inch skillet over medium heat. Add the chopped tomato pieces. Cook until slightly softened, stirring frequently. Stir in crabmeat and breadcrumbs. Remove from heat.
  4. In a medium bowl, gently mix mayonnaise and yoghurt. Add crabmeat mixture and fold together to blend.
  5. Place tomatoes, right side up, in ungreased rectangular baking dish. Spoon crab mixture into tomatoes, and bake at 350°F for 20 minutes until thoroughly heated.
