Corn and Poblano Chowder

Poblanos are rather mild, large, dark green chiles. The darker the color, the richer the flavor. Paired with corn, they create a sweet and spicy sensation. This could become your signature dish.

Ingredient List

  • 2 poblano chiles
  • 2 teaspoons olive oil
  • 1 cup chopped onion
  • 1 1/2 cup frozen corn, cooked and drained
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes
  • 3/4 cup chicken or vegetable broth
  • 2 tablespoons honey
  • 1/4 cup half and half
  • 2 cups from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt

Preparation

  1. Remove stem, seeds and membranes from chiles; cut lengthwise into quarters. Place skin side down on hot grill. Cover grill and cook about 10 minutes or until skin is blackened and blistered. Immediately place chiles in heatproof bowl. Cover tightly with plastic wrap; cool 5 minutes. Peel blackened skin from chiles. Rinse chiles; chop. Set aside.
  2. Heat olive oil in 2-quart saucepan over medium heat. Cook and stir onions in oil about 5 minutes or until translucent. Add 1 cup of the corn, chiles, salt, black pepper, red pepper flakes, and coriander.
  3. Cook uncovered 2 minutes, stirring occasionally. Stir in broth, honey, and cream. Gently stir in yoghurt.
  4. Cook uncovered 10 minutes or until hot, stirring occasionally (do not boil). Spoon soup into bowls. Sprinkle with remaining corn. Top with a dollop of yoghurt and sprinkle with finely chopped cilantro, if desired.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
