Berry Tiramisu

A refreshing spin on the coffee-tinged classic Tiramisu, this one is fruity but still decadent, with dark chocolate grated on top of raspberry-laced layers of creaminess.
Ingredient List
- 2/3 cup powdered sugar
- 1 package (8 oz) cream cheese, softened
- 1 cup from 1 tub Mountain High™ Original Strawberry Whole Milk Yoghurt
- 2 cups frozen whipped topping (thawed) or sweetened whipped cream
- 1/3 cup sugar
- 1/2 cup water
- 1/4 cup crème de cassis liqueur
- 2 packages (3 oz each) ladyfingers, split
- 2 oz. dark 70% cocoa chocolate (from a 3.5 oz bar) , grated
- 1/2 cup raspberry preserves
Preparation
- Blend powdered sugar and cream cheese in a medium bowl with an electric mixer on medium speed until light and fluffy. Add yoghurt and mix well. Fold in the whipped topping or whipped cream. Set aside.
- In a microwave-safe bowl, combine sugar, water, and crème de cassis. Heat on high power for about 60 seconds, stirring occasionally, until sugar is dissolved. Cool 5 minutes.
- Dip half of the ladyfingers quickly and completely in the cooled syrup, coating all sides of each cookie and place in the bottom of an 8X8-inch baking pan, two rows of six ladyfingers across, touching end to end. Spread half of the whipped mixture evenly over the ladyfingers. Sprinkle half of the grated chocolate over the whipped topping.
- Place the raspberry preserves in a microwave-safe bowl. Heat on High power for about 45 seconds, or until spreadable. Drizzle the preserves on top of grated chocolate layer and spread evenly. Sprinkle half of the remaining grated chocolate on top of the raspberry preserves. (The chocolate layers will help hold the preserves in the center of the dessert.)
- Dip the remaining ladyfingers in the syrup and layer them as before on top of the grated chocolate. Top with remaining whipped mixture, spreading evenly. Sprinkle with remaining grated chocolate. Cover with aluminum foil and chill for eight hours or overnight. Store in refrigerator.
