Ingredient List

  • 1 teaspoon olive oil
  • 1 cup chopped onion
  • 1/3 cup chopped celery
  • 1 pound ground beef
  • 1/3 cup red wine or beef broth
  • 1 cup cooked white basmati rice
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon chili powder
  • 2 teaspoons dried basil leaves
  • 2 teaspoons dried oregano leaves
  • 1/2 teaspoon kosher (coarse) salt
  • 1/4 teaspoon pepper
  • 2 cups from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1/2 cup shredded sharp cheddar cheese (2 oz)
  • 1 plum (Roma) tomato, diced
  • 1/4 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt, if desired

Preparation

  1. In a 12-inch skillet, heat olive oil over medium heat. Add onion, celery, and ground beef. Cook over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked. Add red wine, rice, drained tomatoes, chili powder, basil, oregano, salt, and pepper. Cook for about 5 minutes; drain.
  2. Remove from heat and stir in yoghurt. Mix well. Spread in a 3-quart casserole dish sprayed with cooking spray. Sprinkle cheese on top. Bake uncovered at 350°F for about 45 to 50 minutes. Garnish with diced tomato and remaining 1/4 cup of yoghurt.
