Yummy Banana-Chocolate Chip Bread

Ingredient List

  • 2 cups all-purpose flour
  • 1/2 cup quick-cooking or old-fashioned oats
  • 1/4 cup vanilla-flavored whey protein powder
  • 1/4 cup ground flaxseed*
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/4 cup butter, softened
  • 2 eggs
  • 2/3 cup Mountain High® original or lowfat vanilla or plain yoghurt
  • 1 teaspoon vanilla
  • 1 cup mashed ripe bananas (2 medium)
  • 1/2 cup chopped nuts
  • 1/2 cup chocolate chips, dried cranberries or other dried fruit

Preparation

  1. In a medium bowl, combine flour, oats, whey powder, flaxseed, baking soda and salt. In a large bowl, stir sugar and butter until well mixed. Stir in eggs until well mixed. Stir in yoghurt, vanilla and bananas. Stir in flour mixture just until moistened. Stir in nuts and chocolate chips. Spread batter into a 9x5-inch loaf pan (sprayed with cooking spray on the bottom only.)
  2. Bake at 325°F about 1 hour to 1 hour 10 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan on cooling rack.
  3. Loosen sides of loaf from pan with metal spatula; remove from pan and place upright on cooling rack. Cool completely, about 2 hours before slicing.
