The original Waldorf Salad was created at the Waldorf-Astoria Hotel in New York and contained only apples, celery, and mayonnaise. Here we add chicken, walnuts, blue cheese, and the irresistible goodness of yoghurt.

Ingredient List

  • 2 boneless skinless chicken breasts (1/2 pound), cooked, cooled and cut into 1-inch pieces
  • 2 large apples, cut into 1-inch pieces
  • 2 celery stalks, sliced
  • 1/2 cup walnut halves
  • 1/3 cup Mountain High® original, lowfat or fat free plain yoghurt
  • 1/3 cup mayonnaise or salad dressing
  • 2 tablespoons crumbled blue cheese
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 12 leaves Boston lettuce

Preparation

  1. In a large bowl, mix chicken, apples, celery, and walnuts. Set aside.
  2. In a small bowl, stir together yoghurt, mayonnaise, blue cheese, honey, salt and pepper. Pour over chicken mixture and mix well to coat chicken evenly.
  3. Cover and chill 1 to 2 hours to blend flavors. Line 4 plates with lettuce leaves and mound chicken salad on leaves. Cover and refrigerate any leftover salad.
