Vanilla and Chocolate Chip Bread Pudding

Ingredient List
- 8 slices potato bread
- 3 eggs
- 1 1/4 cups sugar
- 2 cups Mountain High® original or lowfat vanilla yoghurt
- 1/2 cup mini chocolate chips
- Caramel sauce, if desired
- Whipped cream topping (from an aerosol can), if desired
Preparation
- Cut crusts from bread and discard. Cut bread into one-inch cubes and set aside.
- In a medium bowl, beat eggs, sugar, and yoghurt until well mixed. Gently fold in bread cubes and chocolate chips, coating bread evenly. Let mixture rest for ten minutes.
- Spread mixture in a greased 11x7-inch (2-quart) glass baking dish. Bake at 350°F for 40 to 45 minutes or until golden. Serve warm, garnished with caramel sauce and whipped cream.
