Ingredient List

Cauliflower Steaks

  • 1 tablespoon olive oil
  • 1 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 2 heads cauliflower, cut from the centers into total of 4 (1-inch) steaks

Curried Yoghurt Sauce

  • 1 cup Mountain High® lowfat plain yoghurt
  • 2 tablespoons chopped fresh mint leaves
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon curry powder
  • 1/8 teaspoon salt
  • 2 cloves garlic, finely chopped
  • Juice of 1 lime (about 2 tablespoons)

Preparation

  1. Heat oven to 450°F. In small bowl, mix oil, cardamom and 1/4 teaspoon salt. Rub cauliflower steaks on both sides with oil mixture. Place in ungreased shallow roasting pan.
  2. Bake 25 to 30 minutes, turning once, until tender and browned on edges.
  3. Meanwhile, in small bowl, beat sauce ingredients with whisk; set aside. Remove pan from oven; pour sauce evenly over cauliflower.
  4. Bake 5 to 7 minutes longer or until sauce is hot. Serve immediately.

Tips

  • Mint and cilantro may seem like an unlikely pair, but together they create a great flavor combination.
  • Sauce can also be served cold over the cauliflower or used as a dip for crudités.
