Yoghurt keeps the meat moist in this classic comfort food. Just don’t overmix the meat or it will get tough.

Ingredient List

  • 1 1/2 pounds lean (at least 80%) ground beef
  • 1/2 cup Mountain High® original or lowfat plain yoghurt
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped carrots
  • 3 cloves garlic, finely chopped
  • 1/4 cup tomato paste (from a 6 oz can)
  • 1 tablespoon spicy brown mustard
  • 2 eggs, beaten
  • 2 tablespoons Italian seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup unseasoned dry bread crumbs

Preparation

  1. In a large bowl, combine all ingredients just until well combined.
  2. Place mixture into a ungreased 9 x 5-inch loaf pan. Bake at 350°F one hour to one hour 15 minutes or until beef is no longer pink in center and thermometer inserted in center reads 160°F. Drain meat loaf. Let stand 5 minutes; remove from pan. If desired, serve with mashed potatoes, steamed vegetables and gravy.
