Chocolate Cupcakes

Ingredient List
- 1 1/2 cups all-purpose flour
- 1 1/4 cups sugar
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup unsweetened baking cocoa
- 2 eggs
- 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 1/2 cup vegetable oil
- 1 1/2 teaspoons vanilla
- 1 teaspoon white vinegar
Preparation
- In a large bowl, combine flour, sugar, baking soda, salt, and cocoa.
- In a small bowl, beat eggs with whisk. Add yoghurt, oil, vanilla extract, and vinegar. Whisk to combine. Pour wet yoghurt mixture on top of dry mix. Fold ingredients just until mixed.
- Place 12 paper baking cups in each of 12 regular-size muffin cups. Divide batter evenly among muffin cups. Bake at 350°F for 25 to 30 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Cool 5 minutes; remove from pan to cooling rack. Cool completely. Decorate with your favorite frosting and sprinkles.
Tips
- Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
