Chocolate Cupcakes

Rich and delicious, these make a great afternoon snack, too. Kids will love decorating their own cupcakes.

Ingredient List

  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups sugar
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup unsweetened baking cocoa
  • 2 eggs
  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1/2 cup vegetable oil
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon white vinegar

Preparation

  1. In a large bowl, combine flour, sugar, baking soda, salt, and cocoa.
  2. In a small bowl, beat eggs with whisk. Add yoghurt, oil, vanilla extract, and vinegar. Whisk to combine. Pour wet yoghurt mixture on top of dry mix. Fold ingredients just until mixed.
  3. Place 12 paper baking cups in each of 12 regular-size muffin cups. Divide batter evenly among muffin cups. Bake at 350°F for 25 to 30 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Cool 5 minutes; remove from pan to cooling rack. Cool completely. Decorate with your favorite frosting and sprinkles.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
