Pound cake got its name from the original recipe: one pound each of flour, sugar, eggs, and butter. Yikes! This version is just as satisfying but much healthier.

Ingredient List

  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 tablespoon grated lemon peel
  • 1 cup Mountain High® original or lowfat plain yoghurt

Preparation

  1. In a medium bowl, combine flour, baking powder, and salt, mixing well.
  2. Mix the butter and sugar in large bowl with electric mixer on medium speed for about 2 minutes. Add the eggs one at a time, allowing them to be well incorporated after each one.
  3. Add vanilla, lemon peel, and yoghurt. Add two thirds of the dry ingredients to the yoghurt mixture, mixing on low until mostly incorporated, then add the remaining dry ingredients. Mix just until batter is moist, do not over mix.
  4. Evenly spread batter in a well-greased 9x5-inch loaf pan. Bake at 325°F for 60 to 65 minutes, until golden brown and a toothpick inserted in the center comes out clean.
