Coconut Cream Pie

Ingredient List

  • 1 frozen 9-inch pie crust (from a 12-oz package)
  • 3 tablespoons cornstarch
  • 1/3 cup water
  • 1 can (14 oz) sweetened condensed milk
  • 3 egg yolks, beaten
  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1 teaspoon vanilla
  • 1 1/2 cups flaked coconut (toasted, if desired)
  • 2 cups whipped cream

Preparation

  1. Bake pie crust according to package directions. Cool and set aside.
  2. Mix cornstarch and water in a 3-quart saucepan until cornstarch is dissolved. Stir in sweetened condensed milk, and egg yolks. Cook over medium heat, stirring constantly, just until boiling. Remove from heat. Stir in yoghurt, vanilla and 1 cup of the coconut.
  3. Spread mixture into cooled pie crust. Cover with plastic wrap, placing plastic wrap directly on surface of custard. Refrigerate 3 to 4 hours or until thoroughly chilled. Garnish with whipped cream and remaining coconut flakes.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
