Apricot Biscotti Parfait

Ingredient List
- 1 cup dried apricots
- 1 cup boiling water
- 2/3 cup orange juice
- 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 1/2 teaspoon almond extract
- 1 cup coarsely crushed biscotti (4 cookies from a 5.52 oz package)
- 4 biscotti, if desired
- Whipped cream topping (from an aerosol can)
Preparation
- Place the apricots in a small heatproof bowl and pour the boiling water over them. Cover with plastic wrap and soak overnight at room temperature.
- Place the apricot (with soaking liquid) and orange juice in a blender container. Cover and blend on high until well combined. Add the yoghurt and almond extract and pulse just until smooth. Transfer mixture to a medium bowl. Fold in the crushed biscotti. Spoon into serving dishes, cover, and chill 1 to 2 hours before serving to blend flavors. Garnish with whole biscotti and whipped cream.
Tips
- Feel free to use Mountain High™ Plain Low Fat Yoghurt or Mountain High™ Plain Fat Free Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
