Ingredient List

  • 1 1/3 cups chopped fresh strawberries
  • 1 1/3 cups fresh blueberries
  • 1 1/3 cups chopped banana
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup powdered sugar
  • 2 teaspoons grated lemon peel
  • 2/3 cup Mountain High® Yoghurt Cheese*
  • 16 egg roll skins (from a 1-lb package)
  • Vegetable oil

Preparation

  1. In a medium bowl, combine strawberries, blueberries, bananas, coconut, powdered sugar, and lemon peel. Add yoghurt cheese; mix again.
  2. Place an egg roll skin on a work surface so it makes a diamond shape. Place 2 tablespoons of the fruit mixture in a line in the bottom third of the egg roll wrapper. Fold up the bottom corner and then fold in the left and right corners like an envelope.
  3. Dip your finger in water and “paint” water on the remaining top edge of the diamond. Continue rolling up the wrap and press lightly along edges to seal. Repeat with remaining wrappers and filling.
  4. Heat 1-inch of oil in Dutch oven to 350°F. Fry spring rolls, a few at a time in oil 2 to 3 minutes, turning once, until golden brown. Remove and drain on paper towels. Serve warm.

Tips

  • Cover strainer and bowl; refrigerate at least 12 hours. Discard whey (liquid) in bowl. Unmold cheese with strainer onto plate. Remove strainer; peel away coffee filter. Cover and refrigerate until ready to use. Makes about 1 1/4 cups.
