- 2 cups Mountain High® original, lowfat or fat free vanilla yoghurt
- 1 cup coconut milk
- 1 cup chopped fresh pineapple or 2 cans (8-oz each) crushed pineapple, drained
- 1 cup ice cubes
- 1 tablespoon fresh lemon juice
- Toasted coconut, if desired
Preparation
- Place all the ingredients except toasted coconut in a blender. Cover and blend on high until smooth. Serve immediately.
