
Split Pea and Ham Soup

A hearty soup for a big appetite. Add a crusty loaf of bread and a salad and you’ve got dinner. You can find dried split peas near the dried beans in most grocery stores.
Ingredient List
- 2 slices hickory-smoked bacon
- 1/3 cup chopped onion
- 1/3 cup chopped celery
- 1 bag (16 oz) dried green split peas, sorted, rinsed
- 6 cups water
- 1 teaspoon kosher (coarse) salt
- 1/4 teaspoon ground thyme leaves
- 1 cup diced cooked ham
- 2 cups Mountain High® original or lowfat plain yoghurt
- 1/4 cup cream sherry
- Additional Mountain High® original or lowfat plain yoghurt, if desired
Preparation
- In a large Dutch oven over medium heat, cook bacon until crisp. Transfer to paper towels to cool, leaving bacon fat in pan. Crumble cool bacon and set aside.
- Add onion and celery to bacon fat. Cook and stir over medium heat about 5 minutes or until onion is translucent. Add peas, water, salt, thyme, ham, and the bacon. Heat to boiling; reduce heat. Cover and simmer until peas are tender, 1 hour to 1 hour 30 minutes. Remove from heat; stir in yoghurt and sherry. Serve warm with a dollop of yoghurt.
