
Schnitzel Stew

Who needs a slow cooker? You can whip up this great stew in about an hour, but it tastes like you spent all day.
Ingredient List
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 pound boneless beef bottom round, cut into 1/2-inch cubes
- 2 cups sliced baby carrots
- 4 large red potatoes, cut into 1-inch cubes
- 1 1/2 cups beef broth
- 1/4 teaspoon kosher (coarse) salt
- 1/4 teaspoon pepper
- 1 cup Mountain High® original plain yoghurt
- 1 tablespoon ketchup
- 1 tablespoon all-purpose flour
- 1 tablespoon finely chopped parsley
Preparation
- In a 3-quart saucepan, heat olive oil over medium heat. Add onions and beef. Cook, stirring occasionally, about 7 to 10 minutes, to evenly brown meat. Add carrots, potatoes, beef broth, salt, and pepper. Heat to boiling; reduce heat to a simmer and cook, covered, for about 30 minutes or until beef and vegetables are tender.
- In a small bowl, combine yoghurt, ketchup, and flour with a whisk. Pour mixture into the hot stew and stir to combine. Cook for a few more minutes to thicken. Add parsley, stir in well, and serve warm.
