
Pumpkin Pie

Ingredient List
- 1/2 cup sugar
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 2 eggs
- 1 can (15 oz) canned pumpkin (not pumpkin pie mix)
- 1 1/2 cups Mountain High® original, lowfat or fat free plain yoghurt
- 9-inch unbaked pie crust
- Additional Mountain High® vanilla yoghurt, if desired
Preparation
- In a small bowl, combine sugar, cinnamon, salt, ginger, and cloves.
- In a large bowl, beat eggs with an electric mixer for about 3 minutes on medium or until pale in color. Add pumpkin and spice mixture and mix well. Add yoghurt and mix until well combined.
- Pour batter into pie crust. Bake pie at 425° F for 15 minutes, then lower temperature to 350°F and continue baking for 40 to 45 minutes, until pie is set in the center. Transfer to a wire rack and cool completely. 
- To serve, garnish with an additional dollop of yoghurt.
