Yoghurt keeps the meat moist in this classic comfort food. Just don’t overmix the meat or it will get tough.
Ingredient List
- 1 1/2 pounds lean (at least 80%) ground beef
- 1/2 cup Mountain High® original or lowfat plain yoghurt
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped carrots
- 3 cloves garlic, finely chopped
- 1/4 cup tomato paste (from a 6 oz can)
- 1 tablespoon spicy brown mustard
- 2 eggs, beaten
- 2 tablespoons Italian seasoning
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup unseasoned dry bread crumbs
Preparation
- In a large bowl, combine all ingredients just until well combined.
- Place mixture into a ungreased 9 x 5-inch loaf pan. Bake at 350°F one hour to one hour 15 minutes or until beef is no longer pink in center and thermometer inserted in center reads 160°F. Drain meat loaf. Let stand 5 minutes; remove from pan. If desired, serve with mashed potatoes, steamed vegetables and gravy.
