Ingredient List
- 1 1/3 cups flaked coconut, toasted and divided
- 1 1/2 cups finely crushed vanilla wafer cookies (about 42 cookies)
- 1/2 cup butter, melted
- 1 package (8 oz) cream cheese, softened
- 1 cup Mountain High® original or lowfat vanilla yoghurt
- 1 can (8 oz) crushed pineapple, well drained
- 1/4 cup frozen pineapple-orange juice concentrate (from a 12-oz container), thawed
- 2 tablespoons honey
- 1 teaspoon grated orange peel
- 1/3 cup chopped macadamia nuts
- 1 cup heavy whipping cream
- Orange wedges, if desired
Preparation
- Reserve 1/2 cup of the coconut. In a medium bowl, combine remaining coconut, crushed cookies, and butter. Press in bottom and up sides of a 9-inch pie plate. Bake at 350°F for 8 minutes. Cool completely.
- In a large bowl, beat cream cheese on medium speed with electric mixer until fluffy. Beat in remaining ingredients except whipped cream on low speed. Cover and chill for 30 minutes.
- Beat whipping cream with electric mixer in medium bowl on high speed until soft peaks form; fold into cream cheese mixture.
- Spread mixture in cooled crust. Cover and freeze 6 hours or until firm. Remove from freezer 10 to 15 minutes before cutting and serving. Garnish with orange wedges.
