Easy No-Bake Cheesecake

Ingredient List

  • 1 envelope unflavored gelatin
  • 1/4 cup boiling water
  • 2 packages (8-oz each) cream cheese, softened
  • 1/2 cup sugar
  • 1 cup 1 tub Mountain High™ Original Vanilla Whole Milk Yoghurt
  • 1 graham cracker crumb crust (6 oz)
  • Fresh fruit, if desired

Preparation

  1. Empty the gelatin into a small bowl, pour in the boiling water, and stir until gelatin dissolves thoroughly. Set aside.
  2. In a medium bowl, mix cream cheese and sugar with electric mixer on low until smooth. Fold in yoghurt.
  3. Stir gelatin; fold into cream cheese mixture.
  4. Spread mixture into pie crust; cover, and chill for 2 to 3 hours or until set. Garnish with fruit.
