
Curried Pancakes with Vanilla Lime Sauce

Ingredient List
Vanilla Lime Sauce:
- 1 tablespoon grated lime peel
- 1/2 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 1/2 cup from tub Mountain High™ Original Vanilla Whole Milk Yoghurt
- 1 teaspoon grated gingerroot
Pancakes:
- 2 eggs, beaten
- 1 tablespoon vegetable oil
- 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 1/4 cup water
- 3 green onions, finely chopped
- 1 tablespoon finely chopped fresh parsley
- 1 cup all-purpose flour
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons curry powder
Preparation
- To make the sauce: In a small bowl, combine all sauce ingredients. Cover and refrigerate 1 to 2 hours to blend flavors.
- In a small bowl, combine eggs, oil, yoghurt, water, green onions, and parsley. Mix well. In a medium bowl, mix together flour, baking powder, baking soda, salt, and curry powder. Whisk flour mixture into egg mixture.
- Brush griddle or skillet with vegetable oil if necessary (or spray with cooking spray.) Heat griddle or skillet over medium-low heat (325°F). (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.)
- For each pancake, pour about 3 tablespoons batter onto griddle. Cook 4 to 5 minutes or until bubbles break on surface and bottom is golden brown. Turn; cook other side until golden brown. Serve warm with Vanilla Lime Sauce.
