Bacon and Egg Potato Salad

New potatoes are harvested earlier than other potatoes, so they have less starch than mature potatoes. Their sweet, moist flesh makes them ideal for potato salads.

Ingredient List

  • 1 pound small new potatoes
  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1 tablespoon maple syrup
  • 3/4 teaspoon kosher (coarse) salt
  • 1/4 teaspoon pepper
  • 4 large hardboiled eggs, sliced
  • 1/4 cup frozen green peas, cooked and drained
  • 4 slices hickory-smoked bacon, crisply cooked and crumbled
  • 1/4 cup finely chopped red onion
  • 2 tablespoons shredded carrot
  • 1 tablespoon chopped fresh parsley

Preparation

  1. In a large pot of boiling water, cook potatoes until easily pierced with a fork through the center, about 20 minutes. Drain and let cool to room temperature. Cut into quarters; set aside.
  2. In a medium bowl, stir together yoghurt, maple syrup, salt, and pepper. Mix well and set aside. In a large bowl, toss together potatoes, eggs, peas, bacon, and onion. Pour the yoghurt mixture over the potato mixture and mix well.
  3. Cover and chill for 3 hours to blend flavors. Sprinkle with carrot and parsley just before serving.
